Watermelon, Sweet Corn & Goat Cheese Salad

Raise your hand if Watermelon and Sweet Corn are some of your favorite things about Summer! 🙋‍♀️

We are lucky enough to live in an area where there are an abundance of farms with the freshest of summer produce to pick from. There’s one farm close by, that is known far and wide to have the BEST sweet corn around. And, let me tell you…it’s no joke. This corn is quite literally the SWEETEST and the BESTEST corn you could put in your face!

My other favorite thing about watermelon and sweet corn in the summertime is that it is CHEAP! If you are anything like me – you absolutely can NOT resist buying 100 ears of corn for $2…and I certainly can’t resist picking the most beautiful emerald green, 7 ton watermelon I can find. However…as delicious as all that produce is, there are ALWAYS leftovers. Leftovers that no one wants to eat after the 12th time. Leftovers that you just can’t bring yourself to throw away.

So…what’s a girl to do?? Enter Watermelon, Sweet Corn & Goat Cheese Salad!

This salad is easy, refreshing, sweet, salty…and EVERYTHING good about summer. This will also make you a hit at your next summer BBQ or potluck…You’re welcome!

A note about goat cheese! As you know, I need to be dairy free. I CAN however eat goat cheese! I love the tangy creaminess of it, and I feel like it lends just the right amount of savory to this sweet salad. However, if you don’t have a dairy issue, feel free to swap out for Feta crumbles. The Feta will give you the same tangy, salty layer of flavor, but ultimately it will hold up better if you are taking this somewhere as a side dish.

Tip #1: Although any cooked sweet corn will be delicious in this recipe – I highly recommend grilling your sweet corn on the cob. I take the husks off of the corn, and put that golden delicious right on the grill grates. Some of your kernels will be slightly charred, and it kicks your corn up a notch, with a delicious sweet smoky flavor, that you don’t get otherwise.

Tip #2: Get yourself a melon baller. Ok, this is 100% not necessary…but I 100% believe the cute little shape makes melon taste better…don’t you? Plus…it’s cuuuuuutttteee!

Watermelon, Sweet Corn & Goat Cheese Salad

Ingredients

  • 4 Cups cut Watermelon

  • 2 Cups Sweet Corn

  • 4 oz. Container Goat Cheese

  • Juice of 1 Lime

  • Torn Mint Leaves for Garnish

Directions

  • Remove watermelon seeds, and use a melon baller or cube watermelon into bite size pieces
  • Cut cooked and chilled sweet corn off of the cob
  • Place watermelon and sweet corn together in a large bowl, squeeze lime juice over the top, and mix together. Chill in refrigerator until ready to serve.
  • Just before serving, mix in container of goat cheese and sprinkle torn mint leaves over the top of salad.
  • Enjoy!
